I cannot count how often I experimented with Napa Cabbage Salad to tweak the recipe. The Internet contains recipe variations with ham and without, bell pepper and without. The same story is about dressings: mayo, sour cream, etc. But finally, I have my favorite recipe to share with you. 😊
This Napa Cabbage Salad is delicious and easy to make and can be included as a meal prep option. It's packed with crunchy vegetables and protein and tossed in a tangy dressing. Can you customize it? Sure thing! Add more protein, such as grilled chicken, shrimp, or tofu, for a complete meal. 🍤
But let's start with a tip of the day.
If guests are coming but dinner is late, throw some onion into a skillet to saute, and the kitchen will smell of tasty food. 😄
Napa Cabbage Salad
Serves 4
Prep time: 15 minutes
📝 Ingredients:
1/4 Napa Cabbage (washed and pat dried)
1 Cucumber (regular sized)
4 Green Onions (washed, pat dried, and sliced into thin rings)
1/2 Fresh Dill (bunch, chopped)
4 Eggs
3 tbsps Sour Cream
3 tbsps Olive Oil
1 tsp Yellow Mustard
Sea Salt & Black Pepper (to taste)
1/4 tsp Red Pepper Flakes (optional)
📝 Instructions:
Place Napa cabbage on a cutting board, and with a long knife, slice it across the leaves and stem as thin as possible. Don't use the brutal end. Place shredded cabbage in a bowl. (For this recipe, you'll be using only 1/4 cabbage).
Cut cucumber in half and then thinly slice it. Also, slice the green onions and fresh dill.
Slice hard-boiled eggs into halves and remove the yolks. Slice the egg whites into thin slices.
Mash the egg yolks with a fork in a small bowl, add sour cream, mustard, olive oil, salt, and pepper, and mix. If it's too thick, add olive oil to thinner the mixture slightly. It must be of the sour cream consistency.
Add sliced cucumber, green onions, dill, and egg whites to a bowl with cabbage. Add the dressing and mix everything well. If desired, sprinkle the salad with red pepper flakes and serve.
Leftovers. Refrigerate in an airtight container for up to two days.
